Think Spice, Think Nutmeg – Think Ice Cream

Aparna from My Diverse Kitchen is hosting this month’s ThinkSpice Event, featuring nutmeg as the main ingredient.

I had a hard time coming up with an idea on what to do with nutmeg – it is a very common seasoning for cauliflower or mashed potatoes in my part of the world, and it is used in many Indian dishes, but not prominently. In the end, a bowl of fresh organic blueberries and half a tub of mascarpone offered a solution.

Mascarpone and Nutmeg Ice Cream

3 egg yolks
75 g powdered sugar
150 ml milk
200 ml heavy cream
125 g mascarpone
nutmeg — about 1/3 of a nutmeg, freshly grated

In a large heatproof bowl slowly whisk together the egg yolks and powdered sugar until light in colour and creamy.

In a heavy-based saucepan, combine the milk and cream. Slowly, bring the mixture to just below boiling point. Pour a little warm cream into the egg yolks and combine. Continue adding cream until the two mixtures are completely combined.

Transfer the mixture to a clean saucepan and cook gently over low heat, stirring constantly to prevent it curdling. When thickened, pour the mixture into a bowl, add the nutmeg, stir, and leave to cool. Transfer to the refrigerator for at least one hour, or more.

Fold in the mascarpone (I used an immersion blender).

Pour the mixture into an ice cream machine and churn until frozen according to manufacturer’s directions, or freeze in a suitable container.

To serve, transfer the ice cream to the refrigerator 15 minutes before serving so that it is nice and soft.

Serve with fresh blueberries or a blueberry sauce or syrup.

The ice cream makes about the smoothest, creamiest frozen dessert I’ve ever tasted. The nutmeg flavoring is rather strong but goes very well with blueberries (or blueberry sauce) – I wouldn’t eat it on its own with that much nutmeg, though. Combined, this is a winner.

    Na, das ist ja eine interessante Kombination! Und ich habe zuvor noch nie Muskatnuss in der Schale gesehen. Ist doch schön, dass man immer wieder Überraschungen erlebt.
